Compact refrigeration for busy kitchens

FEM launches Gram G Compact series

Designed for demanding commercial kitchen environments is the Gram G+ Compact Series of space saving, energy efficient refrigerators and freezers from FEM. 

The smallest Compact 200 models have low noise emissions, so can be placed under countertops front-of-house without disruption. They have an internal capacity of 128 litres and a net usable storage of 78 litres. The largest in the range, the Compact 600 models, have a capacity for GN 2/1 containers in depth and at just two metres tall are particularly useful where height restrictions prevent the use of standard GN refrigeration units. They have a gross internal storage of 580 litres and a net usable capacity of 421 litres.

For ease of use all have a reversible right-hand hinged door with a full-length ergonomic handle and lock. Glass-door display versions are also available. The refrigeration units operate within a +2°C to +12°C temperature range and the freezers between -22°C to -5°C. List prices for the Compact 200 start at £1,045.

One cabinet, two independently controlled MultiTemp sections

The new Jade MultiTemp VVJ1 cabinet from Williams not only offers the full MultiTemp temperature range from -22°C to +8°C, it also has two independent sections, each with its own dedicated controller, allowing different storage temperatures to run. This means operators can store products at precisely the best temperature – whether they want cheese kept at 6°C, meat at 0°C, or ice cream at -12°C. 

The VVJ1 can hold 189 litres in each compartment and is WiFi enabled for remote monitoring, temperature adjustment and HACCP logging. Built to Climate Class 5, it can operate in ambients of up to 43°C and runs on natural refrigerant, which has low GWP (Global Warming Potential) and zero ODP (Ozone Depletion Potential).

The cabinet measures 727mm wide by 880mm deep by 1960mm high and is priced at £9,790.

Battery powered Vito brings full mobility to frying oil filtration

A cordless version of Vito’s VM frying oil filtration system is now available from Valentine & Cuisinequip, deliver greater flexibility and efficiency in professional kitchens.

Vito VM Battery offers full mobility through an 18V interchangeable battery system. This allows operators to filter frying oil without being restricted by the accessibility of power supply or power cuts. Each battery charge supports four or more filtration cycles, enabling use across multiple fryers and helping kitchens maintain oil quality with minimal disruption to service.

The unit is placed directly into hot oil, where it removes suspended particles and debris automatically, without the need for supervision. After a standard cycle of approximately 4.5 minutes, the filtration process stops automatically, leaving the oil ready for immediate reuse.

The Vito VM Battery is fully compatible with the VITOconnect system, providing real-time insights into productivity, servicing, HACCP compliance, and system updates via WiFi connectivity.

Pizzas made quick and easy with the Pratica Forza STi

The Pratica Forza STi Fast Stackable Pizza Oven from Foodservice Equipment Marketing (FEM) incorporates microwave and impinged air heating technologies for cook times up to 50% faster than conventional ovens. 

With precisely controlled heat distribution and inbuilt sensors for consistent results, the cook chamber can hold a pizza with a maximum diameter of 40cm, with the temperature able to be set anywhere up to 330°C.

Constructed from stainless steel, the oven features a clear glass door and interior lighting, while powerful heat insulation and a removable catalytic converter filter reduce heat and odour release into the surrounding area. 

The oven is controlled through a full colour touchscreen interface that can store an unlimited number of recipes. Recipes can be created or updated directly on the oven or remotely using the Pratica IoK Platform.

Measuring just 075mm wide by 788mm deep by 340mm high, two units can be stacked together allowing for output to be doubled while maintaining the same compact footprint. It has a list price of £5,990.

Wexiödisk commits to utilising 98% recycled steel

Wexiödisk dishwashers will now be made from 98% recycled steel, with 0% compromise on steel quality, the Swedish warewashing manufacturer has announced. This includes internal components as well as the body of each dishwasher. 

It builds on an earlier collaboration this year with Aperam, a leading stainless steel manufacturer, focused on the use of Aperam’s “Infinite” stainless steel, already delivering a 47% reduction in CO₂ emissions compared to its standard products.

This announcement is part of Wexiödisk’s commitment to minimising the brand’s burden on the earth’s resources and to develop sustainable, environmental-conscious solutions. Johan Engström, purchasing manager at Wexiödisk, comments: “Since the very beginning, one of our brand USP’s has been that we use quality steel both internally and externally. So, to be able to retain the same durability and quality credentials that our brand is known for, while reducing our own CO₂ emissions by over 700 tonnes each year by using Aperam infinite stainless steel is fantastic.”
