How did you get into the industry?

I started at David’s when I was 15 and was just the back boy, earning some money to help with school. This soon became something I enjoyed, and I moved up the ladder. I spent 12 years here, left briefly, then came back and have been co-owner for four years.

What’s your favourite food?

My favourite food is actually cod and chips with a side of curry sauce and mushy peas both together, a bit strange but lovely.

Is there a food you won’t eat?

The only thing on the menu that I don’t like is cod roe. My dad used to eat it when I was younger and the smell never agreed with me.

Where have you had the best fish and chips?

I don’t really go for fish and chips when I’m out and about, so the best has to be my own. But I suppose I do cut my own fish and I make sure it’s a big chunky piece.

What side is a must with your fish and chips?

Curry sauce is my go-to with fish and chips, and I don’t think many could argue. It just seems to hit differently than peas.

If you could open a fish and chip shop anywhere, where would it be?

One of my favourite places in the world is Roda in Corfu. If I could open my own shop over there, then that would be the dream. I’m not too sure I would deal with the heat and the pans though.

Do you have a favourite restaurant?

Miller and Carter as they have the best steaks and there’s always something different on the menu each time. 

What is your go-to drink?

If I’m being boring my go-to drink is a cup of tea, but, if I’m honest, I do enjoy a Corona beer with lime. It has to be very cold and with the slice. 

What dish reminds you most of your childhood?

Fish finger sandwiches are my childhood memory food. I’d come home from school and my mum would make me one before I went off to play with my friends or football training.

What is your guilty food pleasure?

Sausage, egg and homemade chips. It’s got to be the best and quickest meal and it always goes down well with some bread and butter.

What’s been your weirdest food combination?

Once on holiday in Corfu, we found a pancake shop that made weird pancakes. My favourite was bacon, sausage, cheese, chips, BBQ sauce and mayo. All wrapped in a pancake. It was fantastic and I’ve been back many times.

What one piece of equipment would you love to purchase for your business?

A touch-screen menu is something I would love to have at my shop. I’m not too sure a traditional chip shop requires one though and I do love the customer/staff relationship.
