How did you get into the industry?
I have a small property portfolio and decided to look at commercial lettings. The previous owner said I should give it a go but I knew nothing about fish and chips, well, only that I liked them! That evening, I researched the industry, I loved the history that surrounded our national dish, and so I decided to give it a go with just me and a member of staff I inherited from the previous owner. I worked full-time for South Yorkshire Police at the time and I remember exceptionally long hours and hard graft, but here we are with 11 members of staff and me full-time, winning national awards. It’s just an amazing journey.
What’s your favourite food?
Honestly……chips! That’s all I would eat as a kid.
Is there a food you won’t eat?
Eggs. I have never liked them in any form but can eat them in cakes, Yorkshire puddings and the like.
Where have you had the best fish and chips?
King Fisher in Wakefield. I always remember going as a kid and I still go to this day. It’s just the consistency that they have. I love the haddock and the batter is beautiful.


What side is a must with your fish and chips?
Peas for me. It just brings it all together.
Do you have a favourite restaurant?
I’ve not really got a favourite restaurant but I love Indian cuisine, especially when it has a Bangladeshi twist.
What is your go-to drink?
I’m a larger fan. I especially like the Spanish and Italian beers.
What dish reminds you most of your childhood?Â
Finny haddock – which is a smoked haddock fillet – poached in milk. It was a treat as money was very tight back then.
What is your guilty food pleasure?
A juicy piece of fillet steak is always a pleasure.
What’s been your weirdest food combination?
I’m not that adventurous but pancakes and onion gravy is apparently a strange combination!
What one piece of equipment would you love to purchase for your business?
A robotic member of staff would be a dream come true. I’m sure 90% of owners would agree!
