The Fish Works has built its reputation on quality, consistency and sustainability – the same reasons it fries in Frymax
Located on the North Ayrshire coast, The Fish Works in Largs is a family-run fish and chip shop owned by locals Tiffany and Ross Irvin. Since opening in 2017, the shop has become known for its high standards and commitment to quality, sustainability and customer satisfaction.
Being new to the industry when they first opened the takeaway, the pair spoke to other shops and trainers for advice on what products to use and the best practices to implement. One of those conversations was around the frying medium, and the consensus was that Frymax 100% fully sustainable palm oil was a good starting point. “Once we tried it, we never looked back,” says Tiffany. “It just ticked all our boxes.
“It’s always high quality, with a really natural taste that doesn’t affect the flavour of our food. The oil has a high smoke point so it holds up in our busy shop where our pans aware always going at high temperatures. It keeps up with demand and doesn’t break down quickly.”
The Fish Works runs six pans and drops the oil twice daily to maintain optimum quality. “We use a Testo system to monitor the oil, but our experienced staff can tell just by sight and smell,” Tiffany says. “Keeping on top of our oil management helps reduce waste and makes it more cost-effective. Because Frymax lasts longer, it saves money and reduces our carbon footprint.”


Sustainability and inclusivity are also important to the team. The Irvins promote transparency about their ingredients in-store, displaying details of their fish, potatoes and oil. “Frymax being 100% sustainable palm oil fits perfectly with our eco policy,” Tiffany explains. “We’ve only ever had one customer question us about palm oil, and we could reassure them it’s certified sustainable. We also have a growing number of vegetarian and vegan customers who ask what we fry in. Frymax being additive free and vegan friendly means we can confidently cater to them.”
Support from Frymax has also been a significant benefit over the years, with Tiffany describing its ambassadors as “brilliant,”. She adds: “We’ve had Nigel Hodgson and Colin Cromar visit the shop to train our team on oil management and best practices. It’s great for staff to hear it from someone external, it helps reinforce what we teach and gives them a deeper understanding. Colin still calls in regularly to check everything’s going smoothly..”
For Tiffany and Ross, Frymax delivers on every front – performance, sustainability and service. “It’s consistent, cost-effective and fits with our values,” Tiffany concludes. “We wouldn’t use anything else.”
