How did you get into the industry?

I got into the industry for a brief few years when my dad gave me a part-time job at Sykes. I had a little break and worked in various other places but decided that being my own boss was best for me so when my dad passed the shop down to me I jumped at the opportunity!

What’s your favourite food?

This has to be our homemade cheese and onion pie with chips and gravy. It was my grandad’s recipe when the shop used to be a bakery and it’s been passed down. Sadly, he’s no longer with us.  

Is there a food you won’t eat?

Haggis, even its name puts me off!

Where have you had the best fish and chips?

I’ve not eaten at many other fish and chip shops but I have tried The Fryery in Carlisle and thought that it was very good, very clean and the food was very fresh. 

What side is a must with your fish and chips?

It’s got to be gravy as it goes with anything.

If you could open a fish and chip shop anywhere, where would it be?

Somewhere sunny!

Do you have a favourite restaurant?

The Cherry Tree in Chorley. It’s one of the best Sunday lunches I’ve ever had. 

What is your go-to drink?

A can of Vimto – it’s a classic. 

What dish reminds you most of your childhood?

Paella as my mum always used to make it growing up and still does now.  

What is your guilty food pleasure?

A doner kebab after a few!

What’s been your weirdest food combination?

I had a burger once that included pulled duck as an extra topping. I thought it was a weird combination but strangely it worked!

What one piece of equipment would you love to purchase for your business?

A walk-in fridge so that I would have plenty of room and everything could be nicely organised.
