For sites that want to serve top quality baked goods – fresh or from frozen – but lack the space for conventional ovens, Hubbard Systems has launched the new EB 30 Eloma Backmaster.
The EB 30 accommodates three 440mm x 350mm trays, with the capacity to bake up to 36 bread rolls at once. Baking begins with a steam injection into the chamber, which delays crust formation and allows for a greater rise compared to traditional convection ovens. At the end of the cycle, the door opens automatically to prevent overcooking.
With the ability to store hundreds of recipes, the EB 30 can handle everything from morning goods to meat pies, helping even unskilled staff achieve consistent results. Multiple products can also be cooked at the same time.
