How did you get into the industry?
I was working for a company selling BBQ chicken and after a few years I decided I wanted my own business. I knew someone that had a fish and chip shop so spent a bit of time with them and I really enjoyed it. In 1985, I decided to go for it and buy Pisces in Fleetwood.
What’s your favourite food?
Haddock and chips, you can’t beat the taste of fresh fish and just cooked chips.
Is there a food you won’t eat?
Tripe, I just don’t like the look of it!
Where have you had the best fish and chips?
At a Weatherspoons. They had a new young chef in the kitchen and just that small change made a big difference. They were very good.
What side is a must with your fish and chips?
Mushy peas, it just makes it for me.
If you could open a fish and chip shop anywhere, where would it be?
Nice in the South of France. It’s a beautiful place and the weather always seems to be lovely. Perfect for enjoying fish and chips!
Do you have a favourite restaurant?
The Hard Rock Cafe in Manchester. The food is always top quality and the service is fantastic too. The one in London is also very good, but the one in Manchester is closer to me.
What is your go-to drink?
Double Bacardi and Pepsi, two pieces of lime and one ice cube. It’s a great, refreshing taste after a long shift!
What dish reminds you most of your childhood?
Sausage and mash. My mum used to make it a lot for me. I still enjoy it today.
What’s been your weirdest food combination?
In Hong Kong we were served chicken feet and I just couldn’t eat it, they just didn’t look right!
What one piece of equipment would you love to purchase for your business?
A Merrychef high speed oven. I’ve had my eye on one for ages. They look so user-friendly. I’d use them to heat pies fast so they come out crisp, not soggy like a microwave. It would also be great for the other menu items we serve like burgers.
