How did you get into the industry?

I began working as a manager in a fish and chip shop 25 years ago after moving here from Mallorca.

What’s your favourite food?

Chips are, and have always been, my favourite food. I can literally eat them with anything!

Is there a food you won’t eat?

Offal, I can’t stand the flavour or texture – it’s really offal!

Where have you had the best fish and chips?

It’s really hard to choose between The Hook of Halstead and The Hook of Clacton. All managers at both shops cook amazing food and they know exactly how I like it.

What side is a must with your fish and chips?

For me, mushy peas (with a splash of vinegar) complement the meal perfectly. 

If you could open a fish and chip shop anywhere, where would it be?

You can’t beat seaside fish and chips, so a takeaway/restaurant on a cool Australian beach would be lovely.

Do you have a favourite restaurant?

I love a nice Italian meal, especially pizza. There’s always something for all the family to enjoy. 

What is your go-to drink?

I love a good alcohol-free lager. You still get the refreshing taste but not the headache!

What dish reminds you most of your childhood?

Paella, the national dish of Spain. It is my equivalent of a Sunday roast here.

What is your guilty food pleasure?

Tiramisu – creamy, delicious and calorific.

What’s been your weirdest food combination? 

Chips and chocolate. I was recommended it at one of the shops I worked at. I had my doubts but it was actually quite nice. 

What one piece of equipment would you love to purchase for your business? 

A robot that does all of the potato prep. Let me know if you hear of one!
