Tools to drain and lift

Fitting inside a standard round bain marie, Fryersmate has designed a new insert perfect for draining food and keeping it off the bottom of the bain marie.

Unox introduces AI-powered cooking ability 


Hot on the tail of the launch of its X-Generation Combi Ovens, Unox has introduced AI-powered OPTIC.Cooking, enabling operators to simultaneously cook a variety of dishes requiring different cooking times. 

Using an optical sensor, OPTIC.Cooking uses artificial intelligence to recognise and cook a tray of food inserted into the Unox oven chamber. Once the software has been trained to recognise individual items – from beef to vegetables, chicken, cookies, potatoes, fish, and eggs – regardless of which rack the tray is placed in the oven, the intelligent sensor automatically recognises the relevant item. By simply closing the oven door, the AI software will automatically start the correct cooking program.

Matt tableware with a twist

Warewasher works wonders on large catering equipment 


Designed to clean bulky and awkwardly shaped items such as batter mixing bowls and gastronom trays is the WD-7 hood-type warewasher from Wexiödisk. 

To save energy, improve the climate in the dishwashing room and help reduce drying time, operators can opt to include the company’s ECO-Flow technology. This heat recovery system converts steam from the warewasher into energy which is then used to power the warewasher so it is not solely relying on electricity.
