Falcon has unveiled a new range of Cook and Hold ovens that combine high energy efficiency with precise cooking performance.
Designed to enhance yield, boost succulence and improve kitchen productivity, the ovens allow chefs to prepare in advance, hold food safely and free up both staff during busy service.
Available in single and double chamber versions, each chamber features a dedicated 5” touchscreen controller for real-time monitoring. Up to 48 recipes can be stored, with a favourites list for quick access. When cooking finishes, the oven automatically switches to hold mode and records how long food remains hot beyond the set time.
The controller also manages the energy saving system, reducing power use by 30–40% once temperature is reached. Users can track detailed consumption data by day, week, or month. An optional Wi-Fi module enables remote monitoring and automatic HACCP data downloads via cloud or USB.
The single-chamber has15 shelf positions and three shelves while the twin version doubles capacity within the same footprint, with independent control for maximum flexibility.
