A need for speed

With one family owning both Fish!Kitchen in Kingston upon Thames, London, and Jarvis the fishmongers next door, customers to this 30 seater restaurant and takeaway are in a very unique position.

Not only can they choose from a wide range of fish and seafood including cod, haddock, halibut, lobster langoustines and sea bass, but should something catch their eye at the fishmongers’ counter, staff will gladly take it next door to be fried, grilled or steamed.

When a pan fire in February rendered the range beyond repair, it was a race against time to get a new one ordered and installed for this busy chippy not to lose any trade. With Hopkins able to meet this quick turnaround, a new three pan, flat top, high efficiency counter range with L shaped counter and built in Foster drawer fridges was built and installed in just one month.

Executive head chef Nick Melmoth-Coombs comments: “We were working off of four little double fryers to keep going so it was a big relief when the range turned up.”

With an extra pan squeezed into the small space, the restaurant is now running much more efficiently, with Nick adding: “The range is very good, it’s efficient, it heats up quickly and all the parts of the machine are easily accessible, which makes cleaning really easy.”

With the insurance stretching to a new counter too, Hopkins designed a modern flat frontage with black 3D logo to both the front and side. Nick comments: “It’s really changed the look of the restaurant, it's a lot lighter, brighter, fresher and more modern. It’s created a happier place to eat and work.”
