To ensure his shop stands out in a busy town packed with takeaways and restaurants, Cengiz Tezel has put quality at the heart of Miller's Fish & Chips in Ipswich, Suffolk.
Opening four years ago, Cengiz invested in the best quality ingredients, installed modern equipment and implemented high standards of staff training. Within just a year it had qualified for the NFFF Quality award, the only chippy in the town to hold the accolade. It also boasts a five star hygiene rating and a menu offering a wide selection of favourites such as cod, haddock and plaice, as well as calamari, mussels and whitebait. With chicken wraps, kebabs specially marinated and cooked on the griddle, pies and burgers also available, Millers has a loyal customer base, making it a busy shop every day of the week.
“We like to give our customers quality and choice and we constantly try to be the best because customers follow the best,” says Cengiz.
This ethos extends across the entire menu, even down to the curry sauce with Cengiz choosing to use Goldfish Original Chinese Curry Sauce from Keejays.
Made fresh every morning by adding the paste to boiling water and mixing, Cengiz says the curry sauce is a quick and simple addition to the menu that any member of the team can prepare. He adds: “For me, it was the best curry sauce available and I’m very happy with it. It’s easy to make, it looks good, it tastes good, it’s the whole package.
“We just make up what we think we will sell, but if we do sell out and someone comes in and orders some it’s very easy to quickly make up a portion for them.”
Served in 7oz cups for 95p, it’s also very profitable. “The staff always ask at the end of an order if the customer would like mushy peas or curry sauce with their fish and chips. If you ask, people tend to say yes. If you don’t, they forget you sell them.
“We do sell a lot of curry sauce and, like everything we sell, it’s an important part of the menu as it brings money to my till.”
