Once thrown back into the sea or used as crab pot bait, gurnard has become a foodservice favourite loved for its tight, firm flesh, which is why M&J Seafood has added beer battered goujons to its offering.
Made using prime fillet of red gurnard, cut into strips and coated in a light and golden brown beer-flavoured batter, they can be served with a dip, on a fish platter or even in a panini – a modern twist on the fish finger sandwich.
The meaty goujons are supplied frozen and ready to cook in the oven or fryer. Bake for 14 to 15 minutes or deep fry for four to five minutes, until golden brown. Supplied in 1kg bags (14 to 25 portions per kg), serve up 40g to 70g portions for a generous fish dish.
