It might feel like summer has only just arrived, but foodservice supplier Brakes already has its Christmas offering wrapped up.
Including a wide range of new food items, a product guide, menu inspiration booklet, recipe booklet and costing and profitability tools, Brakes has developed a complete package after research revealed how operators require further support to make the most of Christmas 2014.
The festive package, which also includes a ‘Countdown to Christmas’ planner, ensures friers can plan a bespoke Christmas offer with confidence, enabling them to maximise profit during the busiest period of the year.
Options to tailor menus to different price points, different occasions (Christmas fayre, Christmas Day and New Year’s Eve) and specific customers were seen as essential, as was menu inspiration and recipes to support this approach.
Other key findings were a strong demand for multi-use products, wherever possible, to solve potential storage issues. New product development is also in demand but in a number of different areas, with caterers seeking increased quality, authentic options and twists on classic flavours to stand out from competitors and meet customer demand. Individually quick frozen options, premium stuffings, products suitable for a mixed skill base and high quality desserts which save time but don’t compromise on quality or taste, are also in strong demand.
Brakes has developed a wide range of new products to meet these requirements, including individually portioned Smoked Salmon & Beetroot Gravadlax Terrine, a Port, Cranberry and Orange Stuffing Log and a Caramel Brownie Stack, an indulgent mix of chocolate brownie layers filled with caramel on a flapjack base and topped with melting chocolate.
