Peel Tech helps Largs chippy stay clean and green



Opened by locals Ross and Tiffany Irvin in April 2017, The Fish Works is constantly reminded of its duty of care to the environment by the fact it is situated on the promenade in Largs, directly facing the sea.


Investing in a high efficiency frying range and biodegradable packaging were top of the agenda for the Scottish chippy from the start and, as the business has grown, the pair has tightened this up by making swaps like switching from plastic cutlery to wooden alternatives.

One of the most noticeable differences, however, has been the introduction of a Peel Tech filtration system to manage the potato and starch waste, as Tiffany explains: “When we opened, we were trying to cut costs initially so went for an interceptor tank but we had loads of issues with it overflowing and with smells and we could just tell it was going to cause issues further down the line.”

The installation of a Peel Tech instantly solved these problems with the results visible straight away: Tiffany adds: “From the minute it went in we didn’t get the smell and everything was a lot cleaner and tidier.

“When we saw what the Peel Tech was catching compared to the interceptor tank we realised just how much waste had been going into the drains. Now we can see everything so we know the peelings and starch are being caught.”

Opting for the smaller of the two units to fit the compact nature of the shop, the Peel Tech needs emptying after every four to five bags of potatoes with the contents able to go in with the food waste. However, Tiffany is currently liaising with local farmers to see if this can be reused, thereby closing the loop and cutting down the shop’s waste further.

As well as scoring top marks with Environmental Health on its first visit, The Fish Works has also been awarded a Green Tourism Award, a sought after accolade based on a business’s eco-credentials. Tiffany adds:  “We’re one of only two fish and chip shops to get the award, it’s very hard to get but the Peel Tech really helped, the judges were really impressed with that.” And they’re not the only ones, when a group of school children recently visited the shop as part of an environmental project, they drew posters featuring the Peel Tech machine.

With water authorities looking increasingly closer at what small businesses like fish and chip shops are putting into the drains, Tiffany has peace of mind that the Peel Tech unit is helping them fulfill their duty to be a responsible operator, commenting: “We’re delighted we have it as we know we are ticking all the boxes.”
